How to Make the Best Vegan Tofu Scramble

This vegan tofu scramble is a quick, flavorful, and versatile recipe. It's easy to make and perfect for breakfast or brunch.

  • 1 tbsp olive oil
  • One 14 ounce package firm tofu
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground turmeric
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/2 tsp kala namak black salt, plus more for sprinkling right before eating
  • 3/4 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1 heaping tbsp tahini
  • 1/2 cup plain, unsweetened plant-based milk (Such as oat, almond, cashew, or soy!)


  • Drain and rinse the tofu, then using your hands, squeeze out as much water as you can.
  • Place a large saute pan over medium/medium-high heat. (I set my burner to 6/10.)
  • Once hot, add in the olive oil.
  • Break the tofu into medium-large chunks into the pan and cook it for 7 minutes, just until very lightly browned, stirring occasionally. Break the large chunks of tofu up ever so slightly while cooking, but do not break them up too finely.
  • While the tofu is cooking, add the rest of the ingredients into a bowl and stir until smooth and well combined.
  • Once the tofu is done cooking, turn the heat down to medium, pour the sauce into the pan, and cook for 1-2 more minutes, or until your desired texture, stirring constantly.
  • Right before eating, sprinkle and stir in a tiny bit more kala namak black salt for that extra eggy flavor. Then, serve the tofu scramble like you would with regular scrambled eggs! I love to eat it over toasted sourdough with freshly minced chives on top or in a breakfast sandwich with vegan sausage patties and vegan cheese! You can also saute your favorite veggies, mushrooms, and greens and add them to the tofu at the very end! *Of course, this does NOT taste identical to scrambled eggs, but it is a very easy, yummy, and healthier alternative!
  • When reheating leftovers, heat them in a saute pan over medium-low heat with a splash of plant-based milk. Remember to add another dash of kala namak black salt before eating!
