- 3 tbsps vegan butter
- 12 cups yellow onion, thinly sliced
- 1 tsp kosher salt
- 1 tbsp garlic cloves, peeled and finely minced
- 1 tbsp fresh thyme leaves, finely chopped
- 1 tsp ground black pepper
- 1 tbsp vegan worcestershire sauce
- 1 cup vegan pinot grigio (Avoid super sweet wine! Please also see notes for more options.)
- 1 1/2 tbsps all-purpose flour
- 8 cups vegan beef broth (or vegetable broth if you can't find vegan beef broth), warmed
- 2 bay leaves
- 1 tbsp white miso paste
You Will Also Need:
- French bread, toasted until crunchy
- Smoked vegan Gouda cheese
Instructions
- Melt the butter in a heavy dutch oven over medium heat. Add the onions and salt, and sir to coat, then cover and let soften for 5 minutes. Remove the lid and cook, stirring occasionally, until the onions are deeply golden and caramelized, about 45–60 minutes. Adjust the heat as needed to avoid burning, and stir more frequently toward the end, making sure to scrape up all the flavorful bits from the bottom of the pot.
- Stir in the garlic, thyme, and black pepper. Cook for around two minutes, just until fragrant and the garlic has softened.
- Pour in the wine and worcestershire sauce to deglaze the pot, scraping up any browned bits. Sprinkle in the flour and cook, stirring constantly, for two minutes.
- Slowly add the warmed broth while stirring. Add the bay leaves, bring the soup to a boil, then reduce heat and let the soup simmer gently for about 10 minutes. Taste and adjust seasoning as needed.
