Ingredients
 

  • Neutral-flavored cooking oil spray or vegan butter, for greasing

French Toast

  • 1 loaf French bread, 1-inch cubes (Roughly 10 cups) *I have an amazing French bread recipe on the blog. And "stale" bread works great in this recipe!
  • 2 1/2 cups plain, unsweetened almond milk
  • 1 tbsp pure vanilla extract
  • 6 tbsp ground flax meal
  • 3/4 cup organic brown sugar
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 1/4 tsp kosher salt

Crumble Topping

Optional Toppings

  • Pure maple syrup
  • Powdered sugar
  • Fresh fruit, like berries or banana slices
  • Vegan whipped cream
  • Chopped nuts

Instructions
 

French Toast

  • Grease a 9-by-13-inch baking dish.
  • Cut the loaf of bread into 1-inch cubes and scatter them evenly in the baking dish.
  • Whisk the rest of the ingredients in a mixing bowl, then pour evenly over the bread.
  • Gently toss the bread to coat each piece.

Crumble Topping

  • Add all of the ingredients except for the vegan butter to a mixing bowl. Whisk well to combine.
  • Add the butter into the flour mixture, toss to coat the butter, and then cut the butter into the flour using the palms of your hands until well combined and a chunky, crumbly texture has formed.
  • Gently toss the bread in the baking dish one more time, then sprinkle the crumble topping evenly across the bread.

How to Bake the French Toast Casserole

  • Preheat the oven to 350 degrees Fahrenheit.
  • Bake the dish on the middle oven rack for 45 minutes.
  • Allow to cool for a few minutes, then serve with a drizzle of maple syrup, a dusting of powdered sugar, and even fresh fruit like berries or banana slices, chopped nuts, and whipped cream!
