- Neutral-flavored cooking oil spray or vegan butter, for greasing
French Toast
- 1 loaf French bread, 1-inch cubes (Roughly 10 cups) *I have an amazing French bread recipe on the blog. And "stale" bread works great in this recipe!
- 2 1/2 cups plain, unsweetened almond milk
- 1 tbsp pure vanilla extract
- 6 tbsp ground flax meal
- 3/4 cup organic brown sugar
- 1/4 cup cornstarch
- 1 tsp baking powder
- 1 tbsp ground cinnamon
- 1/4 tsp kosher salt
Optional Toppings
- Pure maple syrup
- Powdered sugar
- Fresh fruit, like berries or banana slices
- Vegan whipped cream
- Chopped nuts
French Toast
Grease a 9-by-13-inch baking dish.
Cut the loaf of bread into 1-inch cubes and scatter them evenly in the baking dish.
Whisk the rest of the ingredients in a mixing bowl, then pour evenly over the bread.
Gently toss the bread to coat each piece.
Crumble Topping
Add all of the ingredients except for the vegan butter to a mixing bowl. Whisk well to combine.
Add the butter into the flour mixture, toss to coat the butter, and then cut the butter into the flour using the palms of your hands until well combined and a chunky, crumbly texture has formed.
Gently toss the bread in the baking dish one more time, then sprinkle the crumble topping evenly across the bread.
How to Bake the French Toast Casserole
Preheat the oven to 350 degrees Fahrenheit.
Bake the dish on the middle oven rack for 45 minutes.
Allow to cool for a few minutes, then serve with a drizzle of maple syrup, a dusting of powdered sugar, and even fresh fruit like berries or banana slices, chopped nuts, and whipped cream!
