Pineapple Ginger Beer Mocktail

Fresh, light, and a little spicy, this pineapple ginger beer mocktail is a great booze-free drink year-round! It is very easy and quick to make!

- 1 tbsp agave nectar
- 1 tbsp cane sugar
- 14 fresh mint leaves
- 1 thumb fresh ginger, peeled and roughly chopped (About 1 tbsp)
- 1/2 oz fresh lime juice
- 3 oz pure pineapple juice
- Ginger beer
Finely chop two of the mint leaves and mix them with the sugar on a small plate. Then, add the agave nectar to another small plate.
Coat the outer rim of a short glass in the agave, then firmly press it in the mint sugar to coat it thoroughly. Set the glass in the freezer.
Add the other 12 mint leaves, ginger, and lime juice to your cocktail shaker (or a tall glass) and muddle them together until the ginger and mint are well broken up.
Add the pineapple juice and six ice cubes to the shaker and shake 20 times.
Fill your prepared glass from the freezer with ice cubes and strain the cocktail shaker mixture into it.
Garnish with a lime wheel and a fresh mint leaf!
