How to Make the Best Vegan Pinwheels

These buffalo chickpea pinwheels are a healthy, quick, and easy snack packed with bold, spicy flavor. Perfect for meal prep or a party appetizer, they come together in minutes with simple ingredients!

Ingredients
 

  • One 15.5 ounce can chickpeas, drained and rinsed
  • 1/4 cup pure tahini
  • 1/4 cup + 1 tbsp Frank's red hot sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup red onion, small diced
  • 1/2 cup green onions, thinly sliced
  • 1/2 jalepeno, seeds and veins removed, finely chopped

  • Large tortillas of choice
  • Mixed greens (or favorite greens!)

Instructions
 

  • Add the chickpeas to a mixing bowl and mash them using your hands, a fork, or a muddler. Alternatively, pulse them in a food processor for a quicker option. Mash until no whole chickpeas remain, but be careful not to turn them into a puree.
  • Add the tahini, hot sauce, and all seasonings to the chickpeas, and stir until evenly combined.
  • Add the rest of the ingredients and stir until well combined.
  • To assemble the pinwheels, spread about one-third of the buffalo chickpea mixture evenly over the tortilla, leaving a ¼-inch border around the edges. Sprinkle a generous handful of greens evenly on top. Starting from the edge closest to you, tightly roll the tortilla away from you, gently pressing and tucking in the greens as needed. Slice the roll in half, then cut each half into four even pieces.
