Servings 2 cups

Ingredients

  • One 14 ounce container super firm tofu, cut into medium-small cubes (You can also use extra firm tofu if you prefer a slightly softer texture!)
  • 2 1/2 tbsp white miso paste
  • 1/3 cup raw apple cider vinegar
  • 1/4 cup lemon juice
  • 1 tbsp garlic cloves, peeled and minced
  • 2 tbsp nutritional yeast
  • 1 tbsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp red pepper chili flakes

Instructions

  • Add all the ingredients except the tofu to a container and whisk with a fork until well combined.
  • Add the tofu, close the container, and gently flip it upside down and back a few times to evenly coat the tofu.
  • Let the tofu marinate overnight, especially if you're using super firm tofu. For extra firm tofu, a few hours will do, but overnight always delivers the best flavor!
  • Use this tangy vegan tofu feta to top salads, stuff into sandwiches or wraps, sprinkle over roasted veggies, or enjoy as a flavorful addition to Mediterranean bowls and appetizers!
