Pickle De Gallo

The Best Pickle de Gallo Recipe

If you love pickles and salsa, you have GOT to try my pickle de gallo- a vibrant marriage of Mexican and American flavors. Combining the zestiness of traditional pico de gallo with the tangy punch of dill pickles, this recipe promises a burst of flavors that will brighten your taste buds and leave you craving more. Join me on a culinary journey as we dive into the world of pickle de gallo.

The Fusion Magic:

This salsa takes the beloved elements of pico de gallo – ripe tomatoes, crisp onions, spicy jalapeños – and infuses them with the unique essence of lots of pickles and fresh dill. The addition of diced pickles introduces a delightful tanginess and crunch to the mix, elevating the classic salsa to new heights of flavor.

The beauty of pickle de gallo lies in its versatility. Whether scooped up with tortilla chips or tossed onto a vegan hotdog, brat, or burger, this zesty salsa adds a punch of flavor to any meal. The tangy crunch of the pickles complements the freshness of the tomatoes and dill, creating flavors that dance in your mouth with each bite.

The Flavor Profile:

What makes this salsa truly special is its dynamic flavor profile. The ripe tomatoes provide a juicy sweetness, while the red onions add a subtle sharpness. The jalapeños bring the heat, balanced by the cooling freshness of the dill. And then there are the star ingredients – the dill pickles – which introduce a burst of tangy acidity and a satisfying crunch to every bite.

The Perfect Balance:

Creating the perfect pickle de gallo is all about achieving the correct balance of flavors and textures. It’s a delicate dance between acidity, sweetness, heat, and crunch. Too many pickles and the salsa becomes overwhelmingly tart; too few, and you lose that signature tanginess. Likewise, finding the right amount of jalapeños ensures a spicy kick without overpowering the other ingredients. It’s a fine-tuned symphony where each ingredient plays its part to perfection.

A Twist on Tradition:

While traditional pico de gallo is a beloved staple in Mexican cuisine, pickle de gallo adds an unexpected twist that takes it to new heights. It’s a testament to the evolving nature of food culture, where boundaries are blurred and culinary creativity knows no limits. In a world where fusion cuisine reigns supreme, pickle de gallo stands as a shining example of the magic that happens when different culinary traditions collide.

Versatile and Vibrant:

One of the greatest joys of pickle de gallo is its versatility. Not only does it pair beautifully with classic Mexican dishes like tacos, quesadillas, and enchiladas, but it also adds a zesty kick to American favorites like burgers, sandwiches, and grilled vegan meats. It’s the ultimate condiment that can elevate any meal from ordinary to extraordinary. And let’s not forget its role as a standalone appetizer—served with a side of crunchy tortilla chips, pickle de gallo is a party favorite that never fails to impress.

A Feast for the Senses:

Beyond its culinary appeal, this pickle salsa is a feast for the senses. Its vibrant colors – the bright red of the tomatoes, the vibrant green of the fresh dill, the fiery hue of the jalapeños – are a visual delight. And as you take your first bite, you’re treated to a beautiful combination of flavors and textures that leave you craving more.

So, why not spice up your next gathering with a bowl of homemade pickle de gallo? After all, life is too short for bland food – let your taste buds rejoice in the fusion magic of this fun recipe!

Cuisine American
Servings 3 cups

  • 1 1/4 cups dill pickles (I use Grillo's hot pickle spears!), small diced
  • 1 1/4 cups roma tomatoes, (Roughly 4 roma tomatoes), blanched, peeled, and small diced (See instructions below on how to blanch them!)
  • 1/4 cup red bell pepper, small diced
  • 1/4 cup red onion, small diced
  • 1 jalapeno, minced (Remove seeds if you want it less spicy!)
  • 3 garlic cloves, peeled and minced
  • 2 tbsp fresh dill, finely chopped
  • 1/2 cup pickle brine
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

  • To blanch the tomatoes, cut a small X on the end of the tomatoes, boil them for 30-60 seconds (just until the peels start to peel off), and place them in an ice water bath to stop them from cooking. Then peel and discard the skins!
  • Add all ingredients to a container, stir well, and press a piece of plastic wrap directly on top to keep everything submerged. Chill in the refrigerator for at least 3 hours, but overnight is best. I HIGHLY recommend letting it rest overnight—the texture and taste will improve so much.
  • Serve with tortilla chips! The pickle de gallo would also taste super yummy on a vegan hotdog, brat, or burger!
