I’ve lost count on how many times I’ve made th I’ve lost count on how many times I’ve made this 🤤 KALE TAHINI SANDWICH RECIPE (Yields 1 sandwich) INGREDIENTS: -2 slices whole-grain bread @daveskillerbread -1 cup kale (stems removed), packed super tight -1 tsp olive oil -1 tsp lemon juice -1/4 tsp kosher salt -1/4 tsp black pepper -1 tbsp tahini -Avocado -Everything but the bagel seasoning @traderjoes -Vegan feta cheese @violife_foods -Two thin slices of tomato -Pickled or raw red onion, thinly sliced -Hot sauce for serving (I like eating it with @cholulahotsauce !) DIRECTIONS: -Toast your bread until golden brown. -Add the kale, olive oil, lemon juice, salt, and pepper into a bowl. Massage the kale by squeezing it about 20 times. Massaging the kale softens it, making it more pleasant to eat and digest! -Now, add the tahini into the kale and gently massage together to distribute the tahini evenly. -To build your sandwich, spread desired amount of avocado on one side of both pieces of toast. I usually do about 1/4 of an avocado on each slice of bread. Top them both with your desired amount of everything but the bagel seasoning. Then, onto one slice of the toasts, pile on ALL of the massaged kale and top it with a crumbling of vegan feta. These juice shots get me out of bed in the morning These juice shots get me out of bed in the mornings 🥰 Ginger Turmeric Immune-Boosting Energy Juice (Yields roughly 2 cups of juice) INGREDIENTS: •2 cups organic ginger •2 cups organic turmeric •6 organic lemons •1/2 tsp freshly ground black pepper DIRECTIONS: •Scrub the ginger and turmeric under water until clean, then chop them into smaller pieces. •Peel the lemons. •Add a couple of pieces into your juicer at a time and juice! •Add to a glass container with the black pepper, stir/shake until evenly combined, and enjoy! I take one shot of juice first thing in the morning. *Store in the fridge and use within four days for optimum health benefits. The juice is still good after four days, but the benefits will not be quite as strong. Try this for your next dinner 🤌 💚Vegan Cra Try this for your next dinner 🤌 💚Vegan Crab Cake Rice Paper Dumplings INGREDIENTS: •Vegan crab cakes @gardein , cooked and slightly smashed down •Small rice paper sheets •Jalapeño, thinly sliced •Avocado, cut into flat bite-sized pieces •1 tbsp coconut oil or vegetable oil for cooking •Dipping sauce of your choice (I use vegan kimchi mayo!) DIRECTIONS: •To assemble a dumpling, place a sheet of rice paper on a plate, and run it under hot water in your sink for around 5 seconds or so. Do NOT hold it under for too long, or the rice paper will become too soft and not usable. Wipe away the excess water. •Keep the rice paper on the plate. Place two slices of jalapeno in the center. Place a smashed crab cake on top, followed by a piece of avocado. •To wrap the dumpling, take the top half of the rice paper and tightly, but gently, pull it over the filling. Then, take the bottom half of the rice paper and fold it over the filling. Now, take the right side of the paper and fold it over the filling. Lastly, take the left side of the paper and fold it over the filling. •Wrap the dumpling in a piece of rice paper a second time. When doing this, place the side with all of the excess rice paper folds face DOWN. So, the thinner side with no folds should be facing up. •Place a large saute pan over medium heat. Once hot, add in the coconut oil. Once the oil is hot, add in the dumplings. Do NOT overcrowd the pan, or the dumplings will stick together.
